Born and raised in Lahaina, on the island of Maui, Hawaii, Chef Mark Santiago’s passion for cooking started at a young age. The influence of Santiago’s upbringing in a Hawaiian/Filipino household can be experienced through his food which showcases his affinity for bold flavors. His culinary career started in the Pacific Northwest while he studied at the Art Institute of Seattle.
Inspired by the abundance of seafood in Seattle, he created modern versions of local favorites, with a spicy kick of course. He made his mark on the culinary map in Bellevue, Washington, where he showcased his flair for Pacific Rim cuisine combined with his love of Asian fusion and hosted weekly wine pairing dinners. Wanting to grow outside of Seattle, Santiago was fortunate enough to join the hospitality industry which allowed him to travel along the East Coast and continue to evolve his style and techniques. In 2014, Santiago was thrown into the epicenter of the South when he moved to Savannah, Georgia; he quickly adapted to his new home and has whole-heartedly embraced Southern cuisine. It didn't take long for Santiago to be featured in local festivals, including hosting live demonstrations at Aquacurean on Hutchinson Island, Georgia.
Most recently Mark has been tapped as Executive Chef at the Mansion on Forsyth Park and its signature restaurant, 700 Drayton. He is looking forward to bringing a new focus on the Mansion’s culinary scene including many exciting developments to come.
